Chipotle Salsa
Cinco de Mayo is just around the corner, so why not make some salsa? I was looking to make a salsa reminiscent of an old favorite restaurant of mine called Chevy's. The key to this recipe is the smoky flavor from the adobo sauce and chipotle peppers. Be careful, it can get pretty hot!
1 lb. roma tomatoes (about 8), diced
1/2 medium yellow onion, finely diced (about 1/2 cup)
1 small jalapeno, seeds removed, finely diced
2 cloves garlic, finely chopped
1 Tbsp. adobo sauce (from a can of chipotle peppers)
Juice of 1/2 a lemon
3 Tbsp. chopped cilantro
Salt and pepper
1 8-oz. can tomato sauce
Combine all ingredients in a large bowl except for the tomato sauce. Divide mixture into two separate bowls. Using a hand blender in one of the bowls, mix the salsa mixture with the tomato sauce until lightly blended. Add back to the the other chunky mixture. Stir until smooth or continue processing with the blender until desired consistency. Serve with chips.
